Maria’s Cornbread

Ingredients

  • 1 cup Flour
  • 1 cup Cornmeal
  • 1/4 cup Canola
  • 1/2 tsp Salt
  • 2 tsp Baking Powder
  • 3/4 cup Sugar
  • 3 Medium Eggs or 2 Large Eggs
  • 1 cup Milk

Instructions

  • Mix Cornmeal and Canola together well
  • Add all dry ingredients to Cornmeal and Canola
  • In a separate bowl mix Eggs and Milk together well, then add to the mixture
  • Let sit 15 minutes before baking
  • Completely cover pan with cooking oil, and sprinkle flour over the oil – shake off excess flour
  • Bake uncovered at 400° in an 8x8 square pan for 32-35 minutes

Notes

NOTE: To ensure your bread rises completely, refrain from making loud noises on your stove while baking.
